Recipe: GLOW Cookies (aka Vegan / Gluten-Free Oatmeal + Raisin)

Why do these cookies make you Glow? Well because they are vegan, they lack gluten, there’s only natural sources of sugar and very low amounts at that, yet they are super tasty and easy! So even though I haven’t technically started this blog, I couldn’t help but share.

These are pretty much the only kind of cookies I eat these days because I don’t like most store-bought vegan cookies that are usually really high in sugar to make up for the lack of taste. And also because I’m not much of a baker (great on the stove top though!). And because I usually have the ingredients on hand. SO good, let me know if you try them!

Glow Cookies

GLOW COOKIES (Vegan Oatmeal + Rasin)

Makes about 20 small cookies

1. Preheat to 350

2. Mix the following in a bowl:

  • 3 very ripe bananas
  • 2 1/2 cups regular oats
  • 1tbs vanilla extract
  • 2tbs vegetable oil
  • 1tsp baking soda
  • 2/3 cup raisins
  • 2tbs ground flax (optional)
  • 1 scoop chocolate protein powder (optional)
  • 1tbs agave nectar or maple syrup or brown sugar (add up to 3tbs if you want them sweeter)

3. Plop small, flattened balls of the mixture on a greased or non-stick cookie sheet and back for 10min or so. They will always have that “just out of the oven” chewiness due to the banana. YUM!

    I love that this is not packed with so much sugar in comparison to other cookies that call for at least 1/2 cup of white sugar and sometimes even brown sugar. Good stuff, I hope to make these sometime. Thanks!

    Totally agree, Jan! I can’t stand super-sweet stuff anymore so these are perfect for me, but I could see some people needing about another tablespoon in there :) Try em out and let me know what you think!

    My new staple for a sweet that doesn’t kill my workout! These turned out great and it’s also a great base to get creative with any other things you may want to add. I really enjoyed mine with dried cherries. LOVE these, and even though i am awful at baking I found the recipe so easy to follow that I think I can do it on my own next time! Thanks Lana!

      Megan, You captured what’s so amazing about them: delish, healthy, creative, simple! You just throw it together love it and then put yourself into it with whatever u like, next time choco chips (carob I guess) and crushed walnuts! Thanks for giving em a whirl!
